Easy 3 Ingredient Peanut Butter Cookies
Ingredients
Makes about 18 cookies, depending on size.
1 cup organic cane sugar
1 cup peanut butter (smooth or crunchy)
1 large egg
½ cup chocolate chips (optional but delicious)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix all ingredients together in a medium bowl until smooth and fully combined. Fold in chocolate chips if using.
Scoop dough onto the baking sheet using a small cookie scoop, or roll into 1-inch balls by hand.
Shape: Press down gently with the back of a fork, then again in the opposite direction to create the classic crisscross pattern.
Bake for 8–12 minutes, until the edges are just beginning to set. Do not overbake—they’ll continue to firm up as they cool.
Cool: Let cookies rest on the tray for 1–2 minutes before transferring to a wire rack to finish cooling.
Storage
Store in an airtight container at room temperature for up to 5 days.
Freeze for longer storage: place cooled cookies in a freezer-safe container for up to 2 months.
