Ingredients You’ll Need
3 lb chuck roast
1 large sweet onion, sliced
5 cloves garlic, minced
2 tbsp oil
For the gravy:
2 tbsp butter
2 tbsp ranch seasoning
1 tbsp cornstarch or arrowroot starch
1 (6 oz) can tomato paste
3 cups beef broth
1 tbsp Worcestershire sauce
Salt and black pepper, to taste
2 bay leaves
2 tsp dried rosemary
2 tsp dried parsley
Let’s Make It
Sear the Roast Heat oil in a skillet over medium-high. Pat the chuck roast dry, season with salt and pepper, and sear on all sides until browned (about 3–4 minutes per side). Transfer to your slow cooker.
Sauté Aromatics In the same pan, melt the butter. Add onion and garlic; cook for 3–5 minutes until softened. Stir in tomato paste and cook another minute. Add ranch seasoning, rosemary, parsley, beef broth, and Worcestershire. Cook for another minute. Pour gravy over the roast.
Cook Low and Slow Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until meat is fall-apart tender.
